ChardonOwl is a delightfully well-rounded and smooth dry white wine made from Chardonel grapes.  Our Chardonel is fermented in new medium toasted American oak barrels.  The young wine is barrel aged sur lees for three months to add complexity plus a hint of oak flavor.  Chardonel is then blended and aged in stainless steel for additional year to develop a mellow flavor after a malolactic fermentation softens the acidity and adds buttery notes.

Seyval Blanc is fruity, yet crisp semi-dry white wine reminiscent of Sauvignon Blanc.  Created from the Seyval Blanc grape, our wine is slightly citrusy creating a delightful fruit forward wine that leaves a slight expression of sweetness on the tongue.  Finished at 1.5% residual sugar, this is a wine that dry and sweeter wine drinkers can agree on.

 

Our Seyval Blanc grapes are locally grown and our wine is aged in stainless steel for 12 months.

Whooo’s Blush is a fruity semi-sweet blush wine that expresses the more subtle character of the Chambourcin grape.  Our wine is similar in many ways to white Zin, but without that heavy sweetness. Finished at 3.5% residual sugar, Whooo’s Blush is bursting with mature fruit that really makes it a sweeter wine perfect for hours of contemplative sipping on a breezy front porch with friends.

 

All of our Chambourcin grapes are locally grown and our Whooo’s Blush is hand made every step of the way in small lots to assure the highest quality possible.

Water Valley White is a fruity sweet wine bursting with the flavor of fresh grapes.  The Niagara grapes picked to create our wine come from Owl Creek’s old growth Niagara plot – most vines are over 26 years old.  Because of the great age of the vines, we take a lot of care in making the wine, the results remind most folks of popping sweet ripe grapes into their mouth from Grandma’s backyard arbor. The remaining blend is Cayuga which softens the Niagara and adds apple citrus notes. 

 

Water Valley White, named for the high valley where our winery is located, is made from all locally grown fruit, is hand harvested, fermented cold and created in small lots to maximize quality.
